Billy Beach Sushi and Bar to open in old Paratti spot this month

According to a post on Seattle Met’s Nosh Pit blog, Billy Beach Sushi and Bar is set to open in the old Paratti location (5463 Leary Ave NW) later this month. Billy Beach, chef and owner of well-known sushi spot Japonessa, has partnered with longtime food fans Nelly and Shawn Bohnert to open the eatery.

Billy Beach Sushi and Bar is set to have a more personal feel than its counterpart downtown and will be managed by executive chef Kei Sugimoto. Sugimoto told Nosh Pit blog that Beach is “going back to his roots for a more traditional Japanese flavor.”

The sushi bar is set to open in mid or late April, depending on the speed and delivery of the needed permits. The space is currently getting a makeover and will seat 60 guests when completed.

The food menu is set to remain under wraps until the opening, but Sugimoto revealed that omakase and of course sushi will definitely feature. In terms of drinks, Japonessa bar manager Cameron Hagg is reportedly “designing a cocktail menu heavy on housemade components.”
