Oh my! I spent just about 2 and a half hours making this dish for my dinner and sad to say, its not all that. Good but not great. Drat.

Did you have fun doing it at least? :) I've been there... but in my case it was awful. Turned out to be something I had no taste for at all so luckily my relatives did. Making it was fun, though!

Oh, it is an Eggplant casserole...got the recipe from a fat free vegan website - usually her recipes are quite tasty. Interesting ingredients though...the deal breaker for me was the chick peas...not a big fan so I'm not sure why I included them. Made "creamy" with a mixture of Mori-nu "lite" tofu blended with raw cashews and onion powder. Smells really really good and, as I said earlier, not bad but not great. Other ingredients: orange pepper, onion, celery, parsley, mushrooms, garlic...lots of chopping and mincing...nutritional yeast (my fav) oh, and eggplant and then the dreaded chick peas. Next time - more eggplant and no chick peas. Also, other seasonings. Big night of cooking then cleaning up - dishes galore - I'm exhausted.

I agree with kohi: the ingredients should have worked. After all that prep and cooking, of course you're tired. Better luck next time, Nora! And MsB, great line!

Eggplant can be tough to get right. Too bad, because when it's good, it's SO good.

I made duck l'orange once to impress my boyfriend. I had to constantly poke the duck to release the fat (yuk). Then the sauce - thought the recipe called for too much soy sauce but I was new to cooking. It turned black but still had a taste of orange. I was going to throw the whole thing away & my boyfriend convinced me to serve it. When dinner was over he said, "let's not have that again." Turns out the recipe should have had like 2 teaspoons but it called for 4 tablespoons.

So disappointing when good ingedients that should go together ... don't. I had that experience with a curried rice and lentil recipe a friend raved and raved about. I like curry, I like rice, I like lentils. But I did not like that recipe. And it made a TON!
