Lombardi's will now be the Golden Beetle via Maria Hines?

    Ok, I'm no Sherlock Holmes but I just read this article http://seattletimes.nwsource.com/html/allyoucaneat/2013174714_tilth_chef_maria_hines_to_open.html?syndication=rss on Nancy Leson's Seattle Times food blog "All You Can Eat" and it sounds like Maria Hines (Chef @ Tilth in Wallingford) is landing her new restaurant in Ballard and at the Lombardi's location. The name of her new restaurant will be called Golden Beetle and it will be a gastropub When the article came out about Lombardi's closing it said the new restaurant was going to be a gastropub and run/owned by a chef with big roots in the Seattle restaurant scene. And when you read this story Maria Hines herself says her place will be in North Seattle and it will be a gastropub soooooooo it looks really likely that she will land here in Ballard....this is VERY exciting news.

    Can anybody confirm this yet?

    The only thing that would make me second guess this is that it sounds like she doesn't yet have a home for her Gastropub. And I thought the Lombardi's thing was a done deal.

    +1 for not getting the appeal of the name "Golden Beetle" or designation "gastropub." Probably I would actually enjoy eating/drinking in a typical gastropub, but it would take alot to get me past that term. Sounds simultaneously medically icky and culturally pretentious.

    The article says she's looking for a space with seating for less than 60. Doesn't that rule out Lombardis?

    "Gastropub" is too close to "Gastropod" for me. Some people may like snails, but I think slugs. And I agree about the "Golden Beetle" not exactly saying yummy food to me either. But if this is right, I will get over it and go.

    pennygirl - Does Lombardi's offer seating over 60? I haven't been in there for years but walk by it every day and 60 might be its max. Of course I’m sure whoever takes over that spot Maria or otherwise will change it all around.

    Nora bell - Your correct in that it does say in the article she is still looking but it also says she close to finding a spot. IMHO she is putting this article out because she already has a spot but doesn't want to comment on it yet...who knows maybe something to do with finalizing the agreements or it could just be that she doesn’t want to make an official announcement until they move in and start remodeling. That's what I’m thinking. Remember she wants a place close to her Wallingford restaurant (Tilth) and she lives in Crown Hill...hummmm....Time will tell...

    Where ever she lands, Golden Beetle is a terrible name. There may be something interesting from a mythic-birth/mythic adventure behind Golden Bettle, but a name that makes you think about a skittering, crunchy critter while sitting to eat is unappealing. :::shudder:::

    Yeah, the name Golden Beetle, not so much.

    As for the seating I wold venture the seating at Lombardis was at least 120 people.

    Could the name be a clue as to the fare to be served? Could this portend a widening of our gustatory boundaries? A pity though. I don't think any of the beetles commonly called Golden Beetles are native to the Northwest, or even living here as an introduced species. Our locovores will be dissapointed. And of course, next thing you know Egyptian Golden Beetles will be available by the flat in Costco. :-)

    Let's raise our mugs in hopes of a good, enjoyable restaraunt, name notwithstanding, and sucess for the owners and employees!

    I will try anything once! My last adventurous meal was of sex crazed reef worms in Samoa (Palolo...an annual delicacy there.) As salty, gritty strands of clear gelatin go they weren't half bad. Will watch for it on the appetizer section of the new restaraunt!

    (I hope the new owner isnt reading all this!! Or if she is that she has a good sense of humor!! <grin>)

    I walked by the empty Via Verde restaurant next to Sip and Ship today and saw a liquor license application listing the Golden Beetle LLC as the applicant.

  24. Golden Beetle sounded to me to be an Asian restaurant with a very unappealing name. Gastropub? Pretentious and why another PUB. Is there any eating establishment in Ballard that does not have a bar?

    Yeah, good catch. I thought most restaurants carry at least one of those macro-brews because they always sell.
