Pie Bird Bakeshop to open in former Pie Bar location on NW Market St

After seven years of selling pies at farmers markets and through a seasonal delivery service, Pie Bird is preparing to open its first permanent home in Ballard.

Pie Bird, known for its seasonal whole pies, slices, pocket pies (described as “bougie pop tarts”), quiches, and pot pies, is moving into the former Pie Bar location at 2218 NW Market Street. Pie Bar closed earlier this year after 10 years in Ballard.

Pie Bird owner and founder Hannah Jacobsen started her business in 2018. Every summer during her childhood, Jacobsen picked wild blackberries and baked blackberry pies with her grandfather—a tradition that sparked a lifelong love of baking. Her insatiable sweet tooth led her to explore pie making on her own, beginning with fruit pies and eventually branching out into custard, cream, and savory varieties.

Coming from a long line of entrepreneurs, Jacobsen decided to turn her passion for baking and hospitality into a small business. After graduating from college in 2015, she moved to New York City, where she honed her skills professionally at Petee’s Pie Company. She returned to Seattle in 2018 and started Pie Bird.

Jacobsen started out selling slices and whole pies at the University District Farmers Market, later expanding to the Ballard Farmers Market and creating the monthly Pie Club subscription. Pie Bird also takes holiday orders and occasionally hosts special pop-ups around Seattle.

At the new location, Pie Bird plans to serve drip coffee, cold brew, tea, and iced tea alongside its baked goods.

The move to Ballard holds deep personal meaning for Jacobsen, whose great-great-grandparents, Ole K and Ingeborg Rodseth, immigrated to the neighborhood from Norway and once ran a boarding house on Ballard Avenue.

“This neighborhood is deeply tied to my family’s history,” she said. “It feels incredibly special to open Pie Bird just up the street from where they lived and worked so many years ago.”

The Pie Bird team, which has been baking out of a SODO commissary kitchen since the beginning, started remodeling the new space last week. If all goes to plan, Pie Bird will officially open its doors on July 1.
