A tasty new pop-up is coming to Ballard Cupcake Royale (2052 NW Market St) this month. Rodeo Donut will launch inside the Ballard store on Saturday, March 28, and will continue daily at 7 a.m. until the donuts are all gone.

The donut pop-up was created by a group of Cupcake Royale bakers who were interested in creating a “really great, fresh from the fryer donut.”

“We want to change the way Seattle looks at donuts by starting over and building it the way we want to enjoy a donut. Brioche dough that’s so light and not too sweet, glazes that are made fresh daily from fresh ingredients and building mouth-watering flavor concoctions that go so far beyond a maple bar or apple fritter,” says pastry chef Nicki Kerbs from Rodeo Donut.

Rodeo Donut is set to use buttery brioche dough and will source ingredients from PNW farms. The pop-up will offer six daily options including delicacies like raspberry limoncello and whiskey maple bacon.

Cupcake Royale is set to adjust opening hours to accommodate the pop-up and Stumptown coffee will also be available for purchase.
