Beast and Cleaver’s 49th Street Beast to open inside Fair Isle Brewing this week

Beast and Cleaver is ready to open its new venture this week: 49th Street Beast opens at Fair Isle Brewing on Thursday.

Beast and Cleaver announced its plans to open at Fair Isle earlier this summer. Owner Kevin Smith and executive chef Jaimon Westing will run the brewery’s new kitchen. Fair Isle said the food at 49th St Beast will be a “marriage of fermented foods, dry-aged meat, and classical French & English techniques with a modern twist.”

The kitchen is an open concept with a limited number of bar seats so customers get a front-row seat to watch food preparation. They’ll keep the menu small, with veggies, sharable cuts of beef, and desserts.

Fair Isle says it’s an evolving kitchen, which they say is where “ingredients exchange hands between the brewer and the chef, think saisons brewed with house-made koji from the chef and a dessert incorporating the same lemon verbena and plums that Fair Isle used in a beer this past week.”

49th Street Beast will open Thursday, September 7th, and start out operating five days a week, Wednesday to Sunday. Fair Isle will still continue to host guest chefs for special events and collaborations.
