Coffee shop, taproom, and oyster bar coming to former Theo Chocolate space

Here Today Brewery & Kitchen plans to open three new food and drink concepts in the former Theo Chocolate building in Fremont this fall, including a coffee shop, taproom, and cocktail and oyster bar.

The Seattle brewery, which currently has a taproom and restaurant along the waterfront at 2815 Elliott Ave, plans to open a cafe called Good Bones Coffee, a new taproom called Glitter Paw Lounge, and Marigolds, a cocktail and oyster bar, at 3400 Phinney Ave. N.

“What started as a search for our next taproom space led to a whole garden of friends and ideas ready to burst in bloom,” Here Today shared in an Instagram post.

Theo Chocolate closed both its retail shop and warehouse in the last few years when the Fremont-based chocolate company merged with the American Licorice Company (ALC) in 2023.

Its neighboring warehouse is now home to The Picklr, a franchise indoor pickleball facility.

According to the Puget Sound Business Journal, the new businesses are part of a larger redevelopment of the roughly 32,000-square-foot landmark building. The building was built in 1905 and was originally home to the Fremont Trolley Barn, where streetcars were stored until 1941. Redhook Brewery was also a previous tenant for about a decade from the late 80s to late 90s. Theo Chocolate operated there for almost 20 years.

East Seattle Partners owns the building and is planning to add as many as six new tenants to the building, according to the Business Journal. A pottery business called Muddy Goose will also operate inside the building, which plans to offer pottery classes and studio space starting in October.
