Mainstay Provisions will be opening a new location, with plans to operate the on-site café at the upcoming Pickle at the Palms development in Interbay.
The new café will be located on the second level of the building and will overlook the indoor pickleball courts. It will be the third Mainstay Provisions location, joining existing cafés in Ballard and Denny Triangle.
Thom Koschwanez and Ashley Thompson opened the first Mainstay Provisions at 612 NW 65th St in 2019. Koschwanez is a chef-alumnus of Ethan Stowell Restaurants and has 25 years of experience in the restaurant industry.
Pickle at the Palms is being developed by Seattle Storm co-owner Ginny Gilder and her family. The facility, located at 3435 15th Avenue W just south of the Ballard Bridge, will include 20 professional-quality indoor pickleball courts across two levels. Construction is underway, with the opening planned for summer 2026.
